Our conversions use NIST-standardised ingredient densities. Actual weights can still vary by brand, humidity, and measurement technique.
Every ingredient has a unique density. Flour is light and airy (125g/cup), while honey is thick and heavy (340g/cup). Volume measures the space something fills, not how much it weighs.
Our substitutions are based on culinary science and widely accepted baking practices. Each one includes a quality rating (excellent, good, or moderate) so you know what to expect. They work best in forgiving recipes like muffins and cookies.
A cup of flour can weigh 120-155g depending on how you scoop it — a 30% variance. Weighing removes this inconsistency entirely, giving you the same result every time.
