Tips

  • Active dry yeast should be dissolved in warm water (105-110°F / 40-43°C) before use. Instant yeast can be mixed directly into dry ingredients.
  • Fresh yeast is perishable — use within 2 weeks of purchase. It gives a slightly more complex flavour.
  • 1 packet of active dry yeast = 7g = 2¼ teaspoons, enough for about 4 cups (500g) of flour.
