When the best swap works
- Quick yeasted breads, focaccia, and pizza doughs where a softer, more tender crumb is acceptable and you're not chasing a tall, chewy sandwich loaf.
- Enriched doughs — brioche, challah, cinnamon rolls — where butter and eggs already temper gluten development, making the protein difference much less visible.
- Anything mixed by hand or in a stand mixer where you can extend the knead by a few minutes to coax more structure out of the weaker flour.
